- Use your favorite Pillsbury Muffin Mix to enjoy a variety of pancake flavors. To prepare, heat griddle or skillet to 350°F. Grease lightly with oil. Combine 1 lightly beaten egg, 3/4 cup milk, and muffin mix. Mix well. The batter will be lumpy. Pour about 1/4 cup of batter onto hot griddle for each pancake. Cook 1 to 2 minutes or until bubbles begin to break on surface, turn and continue to cook until golden. Yield: 8 pancakes.
- How do I make mini-muffins?
- Muffins can be baked in 24 greased mini-muffin cups. Fill mini-muffin cups 1/2 full. Bake at 450°F for 7 to 9 minutes or until golden brown.
