Peanut Butter Cookies from Pillsbury™ Baking

  • 3/4 cup Jif® Creamy Peanut Butter
  • 1/3 cup firmly packed brown sugar
  • 1 large egg
  • 1/4 cup milk
  • 2 cups Homemade Cookie Mix
  • 1/2 cup chopped salted peanuts

Preparation Directions

  • HEAT oven to 375ºF.
  • BEAT peanut butter and brown sugar in large bowl at medium speed of electric mixer until well blended. Beat in egg and milk. Mix in Homemade Cookie Mix and chopped peanuts until evenly moistened.
  • SHAPE tablespoonfuls of dough into balls and place on ungreased cookie sheets. Flatten with a floured fork, making a crisscross pattern on the tops. Dip fork in flour as needed to prevent sticking.
  • BAKE 9 to 11 minutes. Cool for 1 minute. Place on cooling rack to cool completely.

Rated 2 out of 5 by Fourteen Cups of Excess Ingredient The problem here is that one ingredient, "Homemade Cookie Mix", requires a completely separate recipe which yields 16 cups, of which you will only use a fraction. The result is a cookie with classic taste and texture, and 14 cups of excess "Homemade Cookie Mix" which you may never have time to use. I did use two more cups of the mix to redo the recipe, substituting 1 1/4 cups Smuckers® Natural Peanut Butter (Chunky) in place of the Jif® Creamy Peanut Butter and chopped salted peanuts. This produced much more peanut taste. This recipe really needs to be reengineered to become self-contained, incorporating all of the ingredients of the "Homemade Cookie Mix" in the proper proportions. August 26, 2012
