Raspberry Lemonade Bars from Pillsbury™ Baking

  • Crisco® Original No-Stick Cooking Spray
  • 1 (17.5 oz.) package Pillsbury™ Pink Lemonade Flavored Cookie Mix
  • 1/2 cup butter, softened
  • 1/3 cup Smucker's® Seedless Red Raspberry Jam
  • 1 (8 oz.) package cream cheese
  • 1/4 cup sugar
  • 1 large egg

Preparation Directions

  • HEAT oven to 350°F. Line 9-inch square baking pan with foil, extending foil over edge of pan. Coat with no-stick cooking spray.
  • COMBINE cookie mix and butter in large bowl with fork until mixture resembles coarse crumbs. Reserve 3/4 cup crumbs for topping. Press remaining mixture evenly into bottom of prepared baking pan. Bake 10 minutes.
  • SPREAD jam evenly over partially baked crust. Beat cream cheese, sugar and egg in medium bowl with electric mixer until smooth. Spoon over jam to cover. Sprinkle with reserved crumbs.
  • BAKE 20 to 25 minutes Cool completely. Chill 1 hour. Remove from pan using edges of foil. Peel away foil from sides. Cut into bars.

Rated 5 out of 5 by Decadently delicious... Tried the recipe once and was pleased. Second time around I "embellished" it a bit. For the cheesecake I used 2 eggs(not 1), separated the whites & whipped them with 2 tbsps of sugar. Then I took 1 tbsp of grated lemon peel, 2tbsps Pillsbury cake flour in the cheesecake, yolk & sugar mix, folded in the whipped whites and it was so fluffy! I added 1/2 cup fresh raspberries to the Smuckers jam and garnished after baking with a fresh raspberry & a mint leaf garnish & served at a baby shower to rave reviews. I don't know how the yield is 30 with a 9x9 baking pan. I got 16. Awesome recipe just the same! June 20, 2013

I'm devastated that this product is listed as discontinued by some sources. This mix is terrific, and this particular recipe is very tasty and has a festive look too. January 26, 2013
Rated 5 out of 5 by Great Taste! Highly Recommended! I saw this recipe on the back of the box of the Pillsbury Pink Lemonade Cookie Mix, and decided to give it a try. These bars were fantastic and easy to make! I took them to a family get together and they were quickly gobbled up and given rave reviews from children and adults. I was a little worried that the flavor might be a little too tart for some, but it wasn't. The flavor was the perfect mix of tart and sweet. I bought another box of the cookie mix so I can make these again. I hope Pillsbury brings this seasonal mix back again next Spring. ***I used strawberry jam because my grocery store did not carry raspberry. August 9, 2012
