Sparkling Lemony Crisps from Pillsbury™ Baking

  • 1 package Pillsbury™ Moist Supreme® Lemon Flavored Premium Cake Mix
  • 1/3 cup Crisco® Pure Vegetable Oil
  • 2 large eggs
  • 1/4 cup sugar
  • 1 cup powdered sugar
  • 2 to 3 tablespoons lemon juice
  • Yellow or white sparkling sugar

Preparation Directions

  • HEAT oven to 375°F. Combine cake mix, oil and eggs in large bowl. Stir with spoon until evenly moistened. Shape dough into 1-inch balls. Place 2 inches apart on baking sheets. Place sugar in shallow dish. Dip bottom of glass in sugar and flatten cookies to 1/4-inch thickness.
  • BAKE 5 to 7 minutes or until edges are light golden brown. Cool 1 minute on baking sheets. Remove to wire rack to cool completely.
  • STIR powdered sugar and lemon juice in small bowl until smooth. Drizzle over cookies. Sprinkle immediately with colored sugar.
