  • Crisco® Original No-Stick Cooking Spray
  • 1 package Pillsbury™ Moist Supreme® Lemon Flavored Premium Cake Mix, or Yellow Cake mix
  • 1/2 cup butter, softened
  • 1 large egg
  • 2 cups finely crushed saltine crackers
  • 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
  • 1/2 cup lemon juice
  • 3 large egg yolks
Preparation Directions
  • Step 1Heat oven to 350°F. Spray 13 x 9-inch baking pan with no-stick cooking spray.
  • Step 2Combine cake mix, butter and 1 egg in large bowl with electric mixer until mixture resembles coarse crumbs. Stir in cracker crumbs. Reserve 2 cups crumb mixture. Press remaining crumb mixture onto bottom of prepared pan.
  • Step 3Bake 15 to 20 minutes or until golden.
  • Step 4Beat sweetened condensed milk, lemon juice and 3 egg yolks in small bowl with mixer or wire whisk. Spread evenly over prepared crust. Top with reserved crumb mixture.
  • Step 5Bake an additional 20 minutes or until set and top is golden. Cool. Cut into bars.
