Lemon Poppyseed Quick Bread with Lemon Glaze
Pillsbury™ Lemon Poppy Seed Flavored Quick Bread & Muffin Mix
Additional ingredients to prepare quick bread mix per package directions
8x4-inch loaf pan
3 ½ cups of confectioners’ sugar
½ cup of lemon juice
1 tablespoon water
2 tsp of salted butter
Lemon zest (optional)
QUICK BREAD DIRECTIONS:
Set oven to 375°F. Coat bottom of pan or spray with non-stick cooking spray.
Combine mix, water, oil and eggs in a bowl. Stir 50 to 75 strokes until mix is blended. Pour batter into prepared pan.
Bake at 375°F for 55 to 65 minutes, or until toothpick inserted comes out clean. Cool 20 minutes. Loosen edges with knife or metal spatula; remove from pan.
ICING GLAZE DIRECTIONS:
In a small bowl, combine the sugar, lemon juice, water, and optional lemon zest.
Add in the butter, then microwave on high for 45 seconds.
Whisk until smooth, making sure there are no lumps.
Let it sit for a few minutes then pour it over lemon poppyseed quick bread.
