Menorah Cake Pops Recipe
Additional ingredients to prepare cake mix per package directions
2 cups white chocolate chips
¼ cup vegetable shortening
½ cup white sugar sprinkles
9 popsicle sticks
9 cake pops
CAKE POP DIRECTIONS
Set oven to 350°F. Line cupcake pan with cupcake liners.
In a large bowl, beat cake mix, water, eggs and oil per package instructions. Pour batter into cupcake liners.
Bake cupcakes for 19-23 minutes. Cool completely.
Reserve nine cupcakes for Menorah base. Crumble remaining cooled cupcakes in an extra-large bowl by hand or with mixer on medium speed until fine crumbs.
Spoon 1/2 cup of frosting into cake crumbs. Beat or mix until combined. Cover and freeze for 30 minutes.
Line a baking pan with wax paper. Roll cake/frosting mixture into nine 2-inch balls. Place on prepared baking pan. Insert popsicle sticks into center of balls. Cover and freeze at least 1 hour.
In a medium microwave-safe bowl, combine white chocolate chips and shortening. Microwave on high for 2 minutes stirring throughout. Microwave in additional 10-second intervals until completely melted and smooth when stirred.
Remove a few cake pops from freezer, keeping the rest frozen. Spoon melted white chocolate over cake pop, turning as needed to completely cover. Allow excess to drip off.
Immediately sprinkle white sugar sprinkles over each cake pop and then place on wax paper in freezer.
Repeat until all 9 cake pops are covered in chocolate and sprinkles.
Frost nine cupcakes with remaining blue Funfetti frosting. Top with Funfetti sprinkles!
Place cupcakes on a platter in a straight line.
Insert finished cake pops into cupcakes, leaving the middle one taller than the rest, resembling the shammash of a menorah.
