Brownie Ice Cream
Additonal ingredients to prepare brownie mix per package instructions
1 (1.50 qt.) container vanilla ice cream
12 waffle or sugar cones
PREPARE brownie mix according to package instructions using oil, water and eggs. Bake in 13 x 9-inch baking pan. Cool completely. Freeze 20 minutes for ease in cutting.
CUT about one quarter of brownies into 1-inch pieces. (Reserve remaining brownies for another use.)
SCOOP ice cream into large mixing bowl. Let stand 10 minutes to soften slightly. Beat with mixer on medium speed until smooth. Top with brownie pieces. Fold gently to blend in brownies. Place mixture in freezer-safe storage container. Cover with plastic wrap. Press gently to remove air pockets. Cover. Freeze until firm, about 2 hours. To serve, scoop into ice cream cones or dessert dishes.
