Homestyle Biscuit Breakfast Sandwiches
Additional ingredients to prepare biscuit mix per package directions

Set oven to 400°F. Coat bottom of baking sheet with non-stick cooking spray.
In a small bowl, combine biscuit mix and milk until a soft dough forms. Turn on lightly flour surface; knead 3-4 times.
Roll out dough and cut with 3 1/8-inch floured biscuit cutter or cookie cutter 3 1/8-inch full. Press together unused dough and repeat. Place onto baking sheet.
Bake for 8-12 minutes, or until lightly golden on top. If you want, brush with melted butter as they come out of the oven. While the biscuits are baking, prepare bacon and scrambled eggs.
To assemble sandwich, slice each biscuit in half. Place tomato, avocado, bacon, and scrambled egg on the bottom half of the biscuit. Sprinkle with salt and pepper and place the biscuit top on last.
