Funfetti® Brownie Ice Cream Sandwiches Recipe
Additional ingredients to make brownies from box instructions
Vanilla ice cream
PREHEAT oven to 350° F. Line an 8x8 baking pan with parchment paper overhanging on the sides. Set aside.
PREPARE brownie batter according to box instructions. Divide brownie batter in two. Pour one half of the brownie batter into the lined baking pan. Top with half of the candy bits from the brownie mix.
BAKE for 9-12 minutes until a toothpick inserted comes out with a few moist crumbs on it. Cool completely. Using the parchment paper, carefully lift the brownie layer up and out of the baking pan. Set aside.
LINE an 8x8 baking pan with parchment paper overhanging on the sides again. Pour the remaining brownie batter into the pan. Top with remaining candy bits from the brownie mix. Bake for 9-12 minutes until a toothpick inserted comes out with a few moist crumbs on it. Cool completely.
PLACE ice cream carton on the counter for 10-15 minutes until ice cream becomes soft and easily scooped and spread. Spread ice cream on top of the brownie layer in the pan evenly. Add top layer of brownie sandwich on top and lightly press down to form the sandwich. Place in the freezer overnight, covered in plastic wrap.
REMOVE brownie pan from the freezer after a minimum of 12 hours. Using the parchment paper on the sides, lift up the brownies. Cut into squares and serve immediately.
