Chocolate Pumpkin Layer Cake
Additional ingredients to prepare cake mixes per package directions
3 (8 oz.) packages cream cheese, softened
2 teaspoons vanilla extract
PREPARE each cake mix according to package directions using water, oil and eggs to make 2 (9-inch) chocolate cake layers and 2 (9-inch) pumpkin cake layers. Cool completely.
BEAT cream cheese and vanilla in large bowl with electric mixer on high speed until fluffy. Blend in frosting until smooth.
LEVEL all cake layers with long serrated knife. Place 1 chocolate cake layer on cake platter, cut side down. Spread top with 1 cup frosting mixture. Top with 1 pumpkin cake layer, cut side down. Spread top with 1 cup frosting mixture. Repeat with remaining chocolate and pumpkin cake layers. Frost sides of cake with remaining frosting mixture. Garnish as desired. Chill 2 hours to set frosting.
