Earth Day Cupcakes Recipe
Additional ingredients to prepare cake mix per package instructions
1 cup granulated sugar
Blue + Green Food Dye
Blue and/or green cupcake liners
Heat oven to 350°F. Add half the sugar to a ziplock bag and the rest to another. Add a few drops of dye to each to make blue and green sanding sugar; mix. Add to a baking sheet and allow to dry for 15 minutes.
Prepare cake mix according to package instructions using water, oil, and eggs. Divide batter in two and dye one portion blue and the other portion green. Line 24 muffin cups with paper baking cups. Alternate colored batter into cupcake tins. Bake according to directions. Cool completely.
Spread frosting over the top of cupcakes. Spoon green and blue sanding sugar onto a plate without mixing them to create the look of ocean and land on planet earth. Dip frosted cupcakes into sugar mixture and enjoy!
