Funfetti® Shamrock Pretzel Cupcakes
Green food coloring
Additional ingredients to prepare cake mix per package instructions
1 package mini pretzels
1 package dark green candy melts
2 tablespoons shortening
Cake pop sticks
Piping tip (number 1M)
PREPARE cake mix according to package instructions using water, oil and egg whites, adding green food coloring to reach desired color. Bake and cool completely.
Melt dark green candy melts in the microwave according to package instructions. Arrange three pretzels and the cake pop stick to form a shamrock. Use a small amount of candy melt to attach together, then set aside to let cool. Repeat, re-melting the candy melts as necessary throughout the process.
When the pretzels are secured on the sticks, add 2 tbsp shortening to the remaining candy melts and re-melt in the microwave. Spoon candy melt mixture over exposed pretzels, avoiding the already set candy (this could cause it to melt and fall apart). Let excess drip, then place on parchment paper to set. Repeat with remaining shamrocks.
Frost cupcakes (we used a 1M piping tip) and add sprinkles, then insert shamrock topper.
